Simple Perfect Pasta: Step 1: Select number of servings. 2 Servings: 1/4 box pasta; 2 qt. water; 1 tsp salt; 4 Servings: 1/2 box pasta; 3 qt. water; 2 tsp salt; 8 Servings: full box pasta; 5 qt. water; 1 tbsp salt. Step 2: Pick your time/firmness. 8 minutes al dente; 9 minutes firm; 10 minutes tender. Step 3: Cooking directions. 1. Bring water to a rapid boil. To add flavor and reduce stickiness, add salt (optional). 2. Add pasta and stir; return to rapid boil. 3. Cook uncovered, stirring occasionally. 4. Drain well. Serve as desired. Maintaining Perfect Pasta: To keep cooked pasta fresh for later use, toss with a small amount of olive oil and refrigerate. Ziti Puttanesca: 1 package (16 oz.) San Giorgio. Ziti Rigati, uncooked. 1 tbsp olive oil. 2 cloves garlic, finely chopped. 3-1/4 cups (29 oz. can) crushed tomatoes. 1 cup pitted ripe olives, coarsely chopped. 2 tbsp capers (optional). 1 tbsp fresh basil, chopped or 1 tsp dried basil leaves. 1/2 to 1 tsp crushed dried red pepper. 1/2 tsp salt. 1/2 cup grated parmesan cheese. Cook pasta according to package directions. Meanwhile, in large skillet over medium heat, heat oil. Cook garlic until golden, about 1 minute; do not burn. Add tomatoes, olives, capers, basil, red pepper and salt. Heat to boiling; reduce heat. Simmer, uncovered, 10 minutes, stirring occasionally. Toss hot pasta, sauce and 1/4 cup Parmesan cheese; sprinkle with remaining cheese. Makes 7-9 servings.
