Soaking Method: To 1 lb (about 2 1/2 cups) of beans add 6-8 cups of hot water boil for 2 minutes. Remove from heat. Cover and let stand 1 hour or let stand in 8 cups cold water overnight at least 8 hours. Drain and rinse beans. Simmer: Cooking Instructions: Bring 6-8 cups water to boil. Add drained and rinsed beans, bring it back to boil, and then lower the heat to simmer. Simmer gently with a tilted lid until desired tenderness is reached, abut 1-1 1/2 hours.
