Confit is a French term referring to a method of cooking and preserving meats - developed long before the days of refrigeration. We follow the traditional recipe for our Duck Leg Confit - marinating duck legs overnight with garlic and spices, then slowly stewing them in their own juices until succulent and tender.
Reheat on the grill, under the broiler or in a skillet. Debone & shred the meat for a salad, ravioli fillings, duck burritos or for a delicious hors d-oeuvre fill pre-cooked mini pastry cups. Keep refrigerated.
