Place seasoned brisket on the rack and open cook brisket for 2 hours and then wrap it in aluminum foil and cook for 4 more hours. Oven: Preheat oven to 250°F, include a small metal container with water close to the heat source for optimal cooking. Place seasoned brisket on a tray and open cook for 2 hours and then wrap it in aluminum foil and cook for 4 more hours. For food safety, insure the internal temperature reaches 160°F in the thickest part as measured by a meat thermometer.
