What you'll need: 1 cup Bob's Red Mill Paleo Pancake and Waffle Mix. 2 eggs. 1/4 cup water. 1 tbsp coconut oil, melted. Pancake Instructions: Preheat lightly oiled griddle or nonstick skillet over medium heat. In a large bowl, whisk together all ingredients until smooth. Pour 1/4-cup portions onto the preheated griddle and cook until edges begin to set, 3-4 minutes. Flip and cook until golden brown. Serve immediately. Makes 4-6 pancakes. Waffle Instructions: Preheat waffle iron to medium heat for at least 10 minutes. In a large bowl, whisk together all ingredients until smooth. Follow waffle iron manufacturer's instructions for measuring and cooking waffles. Makes 2 waffles. Store in a cool, dry place.
