Nothing beats the taste of local peaches when they are in season! Enjoy them fresh as a snack, use them in salsas to accompany meats or make tasty peach desserts. This easy crumble recipe uses less sugar that will still satisfy the sweet tooth. Serve warm over low fat or fat free frozen yogurt or ice cream.
Summer Fruit Crumble
Makes 4, 1 cup servings
Prep time: 10 minutes
Cook time: 30 minutes
2 cups ripe peaches, peeled (optional) and sliced
2 cups fresh or frozen blueberries or raspberries, thawed
2 Tbsp GIANT brown sugar, firmly packed
1 Tbsp GIANT cornstarch
1/4 cup GIANT all-purpose flour
1/4 cup GIANT quick oats
1/4 cup GIANT brown sugar, lightly packed
1/4 tsp GIANT ground cinnamon
2 Tbsp GIANT canola oil
Preheat oven to 350 degrees. Combine fruit, 2 tablespoons sugar and cornstarch in a large bowl and toss gently. Spoon fruit mixture into a shallow 1 1/2 quart baking dish. Set aside. Combine flour, 1/4 cup sugar and cinnamon in a small bowl. Add oil; stir with a fork until dry ingredients are moistened and mixture is crumbly. Sprinkle topping over fruit mixture. Bake for 30 minutes or until topping is lightly browned. Cool slightly before serving.
Nutrition information per serving: 240 calories, 8 g fat, 1 g saturated fat, 0 mg cholesterol, 10 mg sodium, 46 g carbohydrate, 4 g fiber, 3 g protein.
